Savoury Spinach & Mushroom Breakfast Muffins

- 6 large eggs
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 100 g mushrooms, chopped
- 2 handfuls baby spinach, roughly chopped
- 40 g feta or grated cheddar
- Salt and black pepper
- Optional: pinch of chilli flakes or dried herbs

Preheat oven to 180°C (fan 160°C).

Heat olive oil in a pan and sauté onion and mushrooms for 5 minutes until soft. Add spinach and cook until just wilted.

Whisk eggs in a bowl, season well, and stir in the cooked vegetables and cheese.

Grease or line a six-hole muffin tin. Pour in the mixture evenly.

Bake for 18–20 minutes until golden and set.

Cool slightly before removing from the tin.
