These soft, chewy bars are packed with oats, tart Bramley apples, and juicy blackberries. A grab-and-go snack with natural sweetness and slow-release energy.

Apple & Blackberry Breakfast Bars

Serves: 9–12 squares
Cooking time: 30 mins minutes
Level: Easy

Ingredients

  • 2 Bramley apples, peeled and finely chopped
  • 100g fresh or frozen blackberries
  • 150g rolled oats
  • 50g oat flour (or blitz oats into flour)
  • 1 tsp cinnamon
  • ¼ tsp ground ginger (optional)
  • ½ tsp baking powder
  • Pinch of salt
  • 2 eggs
  • 100ml rapeseed oil (or melted butter)
  • 3 tbsp honey or maple syrup
  • 1 tsp vanilla extract

Instructions

Method

  1. Preheat your oven to 180°C (fan 160°C) and line a square baking tin with parchment.

  2. In a large bowl, mix oats, oat flour, cinnamon, ginger, baking powder and salt.

  3. In a separate bowl, whisk eggs with honey, oil and vanilla.

  4. Combine wet and dry ingredients, then fold in chopped apples and blackberries.

  5. Pour into the tin and spread evenly.

  6. Bake for 28–32 minutes or until set and golden on top.

  7. Let cool fully before slicing into bars.

Top Tip: Wrap individually and freeze—just defrost overnight in the fridge for a ready-made breakfast.
