Apple & Blackberry Breakfast Bars

- 2 Bramley apples, peeled and finely chopped
- 100g fresh or frozen blackberries
- 150g rolled oats
- 50g oat flour (or blitz oats into flour)
- 1 tsp cinnamon
- ¼ tsp ground ginger (optional)
- ½ tsp baking powder
- Pinch of salt
- 2 eggs
- 100ml rapeseed oil (or melted butter)
- 3 tbsp honey or maple syrup
- 1 tsp vanilla extract

Method
- Preheat your oven to 180°C (fan 160°C) and line a square baking tin with parchment.
- In a large bowl, mix oats, oat flour, cinnamon, ginger, baking powder and salt.
- In a separate bowl, whisk eggs with honey, oil and vanilla.
- Combine wet and dry ingredients, then fold in chopped apples and blackberries.
- Pour into the tin and spread evenly.
- Bake for 28–32 minutes or until set and golden on top.
- Let cool fully before slicing into bars.
Top Tip: Wrap individually and freeze—just defrost overnight in the fridge for a ready-made breakfast.
